Howdy to all,...just made muster here and fixin to stow my gear. Im from the Southron most coast of N.C. and am a lover of grilled/smoked meats.... Mainly beef/ fish/ wild game. Im not real great at any of it yet but am learning. However,..I do make some great sauces for mopping and some good rubs,..or so the locales say!! Have several grills/smokers ranging from charcoal to electric to wood,..I dont use any gas burners except for frying up fish or boiling shrimp.....with all that said im here to learn and glean up on new ideas from you seasoned pros here.
