from beautiful tickfaw,la. (yes it is as small as it sounds )
i got a brinkman stand up type smoker about a year ago
put the thing together, ran to the store and bought some hickory
and chicken and went to smoking. at about 2 the next morning
i ate the best chicken i had ever stuffed into my face!
since that time, i have destroyed many different kinds of meat.
(except for the day that the planets aligned themselves
and i actually smoked a pretty good brisket)

so i come before yor today in hopes of learning the ways
of the thin blue smoke

My experience is that I can make some of the best smoked food ever but also some of the worst. Experience is what makes the difference. And this forum helps with getting you there faster.
 
Welcome to SMF carnuba!!! The I have destroyed many kinds of meat is a great line. These guys around here will get you lined out and all that will be in the past. Enjoy the forums.
 
Is this an electric type smoker? If so, I think we have the same thing. My biggest recommendation is to always use chunks instead of chips. I used to put a chicken in and blast the thing with smoke for an hour. Now I have learned that the thin white smoke produces far superior flavor and no bitterness.
