Christmas was good this year, jolly ol' saint nick brought me a Smoke Hallow Gas Smoker! I'm a big fan of BBQ but I never thought of smoking my own food till I recently went to a great smokehouse and had the best brisket I've ever tasted. A month later here I am! And I'm very glad to be here! It's 10 degrees outside and snowing like something I've never seen before, but I have my smoker on the back enclosed patio ( door open ) with some nicely seasoned ribs sitting in there, being cooked around ~230 degrees. I only seasoned the smoker last night! I can't wait to learn from all of you experienced kings of BBQ/smoking. Maybe I'll post some pictures once my first rack of ribs is finished! Adam PS: I had to put an extra thermometer in the middle of the smoker, as the one on the door was reading WAY too high! Almost ruined my ribs!
