Hi,

I confess I did a little sneaking around before I made an account. I'm pretty new to all this. I'm from a fairly small city a bit west of Fort Worth. I read up some, found a good deal on an OKJ Highland, brought it home, cleaned it up and sealed up all the leaks I found while burning some pecan through it. After all was cured up, I got a hold of a brisket, prepped it up, and got it in the smoke! 10 hours later, I pulled off an amazing piece of meat that didn't survive long enough for pictures.

I'll probably be doing a lot more reading than talking, but maybe one day I'll be wise enough to offer some advice here and there.

Well, that may be true! But in the back of my head is an old saying: It's better to be silent and be thought a fool than to speak and remove all doubt.
I just know I've got a lot of learning to do, but if I see something I know about I'll probably chip in. If I'm confused, I'll probably ask the dumb questions. Looking forward to this.

That was one of Granddaddy's favorite sayings...LOL

No such thing as dumb questions when learning  to smoke meat. Also, no one answer is anymore right than another. 2 people can cook on the same smoker, prepare the meat the same way, and cook it at the exact same time and temp and still have two totally different outcomes...
 
Foamheart, you're right. I can blink a few times in my town, and still not miss it. I just meant we aren't in a huge place like Ft. Worth or (shudder) Dallas. Close, but at least still at arm's length, figuratively speaking.

I'm beginning to think that Char-Broil lied to me about my OKJ. None of the parts listed for the Highland are the sizes of what I have in my yard. However, the stuff for the Longhorn is matching up a treat, so maybe I got an even better deal than I thought!
 
Thats great. BTW has PK ever filled back up? Long ago I had a camp by Baileys marina. I got mad about the plumbing repairs for my infrequent personal use and sold it. Luckiest thing that ever happened to me. It was a full lake when I sold it.

LOL.... Thats not my usual luck.

If ya don't know already, there are really some great cooks and chefs here who will love to help you with near anything you need , towards smoking and food. Not a single one would come paint my garage when asked though...... go figure.

The site is a great resource.
 
Yeah, PK filled up in the big rounds of rain we got this spring. Right now it's sitting at 999.29 feet, so less than a foot below "full."

Pretty much everything east of Abilene is likely either full or still somewhat in its flood pool.

The drought was rough but if the lakes had been full before this spring things would have gotten very much worse than what they did.
