Hello all. I'm very new to smoking and hope to get some awesome tips. I'm in San Diego and use a Char Griller smoker. So far I've done 3 tri-tips that turned out great and a rack of baby backs that was an absolute disaster. Thanks for having me!
 
I discovered through this site that I failed to remove the skin from the back of the ribs which made them tough. Also couldn't get a good temp reading on them. Top that off with my grill temp fluctuating like waves during a typhoon...made for some good rib flavored jerky.
