Hello all, I am from South Texas and am wanting to get more into smoking and sausage making. I am really wanting to make some deer and wild hog sausage, and have been looking through here and finding lots of good info. I have a Little Tex Electric Smoker the size of a small fridge. I have used it several times to smoke brisket and jerky, with OK results, but nothing I'd be proud to post on here. We also do a lot of grilling on mesquite coals either from a burn barrel or charcoal. The only meat grinder I have is an attachment for my wives kitchen aid, have not tried it yet, but from what I have been reading, probably not the best choice. I have some experience making sausage and other products at my schools meat processing plant, and watching some of the locals make some and helping out, but you all know how that goes and family secrets. I thank you all for your vast knowledge and helpful inputs.

What part of South Texas?  I grew up in Freer Texas right between Corpus Christi and Laredo.  My backside is in Houston but my Heart is still in the brush country.  Hope to move back someday and live on the Ranch.
