I'm new here obviously and well I'll be new to smoking once I get started. I've been grilling for a long time on both charcoal and gas. I cook for family, friends and myself. I love to cook, but consider myself a cooking newbie. I recently started the Paleo diet so every meal is centered around large portions of lean meat, fish, poultry and therefore I've decided its time to expand my cooking skills to low and slow.

I may build a UBS just to get started A.S.A.P.. However, I'd really like to build or buy a used offset. To build an offset I will either have to convince one of my welder friends to help me out or learn to weld somehow I guess. My budget pretty tight, California isn't exactly the BBQ capitol of the world so I may have difficulty finding a used offset. I would mind refurbishing an abused one if I can find one, my main concern is that it cooks properly and is built well out of heavy steel. I pretty handy with tools when I have to be so it shouldn't be too much of a problem, but I'm sometimes too much of a perfectionist.

Any and all suggestions, assistance with be greatly appreciated.
