Howdy all. I'm just checking in to introduce myself.
I have been grilling/smoking/cooking on a Big Green Egg for several years now, and have a good time at it. Other than cooking the nightly boneless skinless breasts, I learn something new every time I smoke something. I also improve a little each time, and people usually tend to like the stuff I turn out.
I'm starting to itch for a new smoker - something that can do a good amount of meat at once, and is easy to use. I love the idea of a big Klose or Lang stick burner, but I like sleeping at night.
I love fiddling with a fire, and agree that it's pretty pure, but I like a little convenience. That's why I use a BBQ Guru on my overnight cooks.
I can turn out consistently good pulled pork, and do pretty well with yard birds. I'm improving my brisket every time I smoke it, so I'm starting to be a decent cook. I'm not a pitmaster, nor do I compete (yet), but I really love cooking & smoking.
