My name is Dennis and yes its cold here!!!.....I just ordered my first real smoker a MES Gen I from Amozon for 319.I have been lurking for awhile and want to say THANKS to all of you for helping.I read a lot of posts before buying and have lots of things I want to try ABT's and chicken wings are first up!!!!Thanks again Dennis.

Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to something you put on a plate to eat then someone here has probably done it then smoked it.

Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with their opinion on the subject.

I see some great BBQ in your future, Did you get the 40" MES? Take your time with your new smoker, there is a learning curve involved! If you have been lurking you already know some of the quirks involved with it! One of the best things I did was go with the AMNPS smoker tray so I don't have to add chips to the MES every half hour. IMHO a Maverick or other quality dual probe therm is the second best investment you can make to produce great Q.

Thanks Wolfman!!! Yes I did get the 40 and thanks for the upgrade suggestions!!! From the reading I have done Those were the 2 things first on my list.
 
Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
