Hi you all!

I am from Kingman AZ now, we moved here from Houston and before that in Minnesota.  Am partially retired, as I teach at the local community college as a member of the faculty.  Also, I write a column that appears in many newspapers and magazines which is called Clark's Eye on Books.  Guess that I will have to get into more of the cooking books now that we have a smoker.

We went shopping over the weekend and bought a Trailmaster by Brinkman.  It is really an awesome looking monster that will surely do the job.  We have lots of Mesquite out here and I love that smell and taste when others use it. Will also use charcoal as well. 

I make ribs all the time using my own special rub and when I do them on a gas grill I still add wood chips to get some smoke but what I am after is the really good smoker.  I have a smaller barrel smoker but with the wind out here in the desert could not keep the darn thing at any temperature. 

Well, we are glad to be among you and as far as skill goes, guess we are in the category of better to good, whatever that means.  Not an amateur, but when you go to the Rodeo in Houston, you surely find the experts. They are what you call finger-licking-gooders.
