Names Tim. Beginner really at smoking meat though I have done a bit with friends and brother in the last two years. I bought a used Braunfeld offset firebox barrel smoker and it is in pristine shape. I am having problems finding the right amount of smoke as my creations have a thick coating and actually numb the tongue. Inside flavor and tenderness is there but the smoke is too much methinks.
 
Tim welcome to SMF glad you decided to join us. Open that exhaust and I think you'll find you still get the smoke flavor but loose the creosote thats causing the numb tongue. Have fun and happy smoking

 tim you may need to clean that N B and reseason it .if there is alot of buildup on the inside (creasote) it needs to come out.

 And just remember that if you can smell smoke you are smoking .you want just a thin blue smoke coming out the stack.

First off Welcome Tim to SMF. you'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

Hi Tim, glad you found the fourm, and hope you enjoy. If you want to check out a bunch of way cool rigs of all shapes and sizes, shawnee has a contest coming up sept 24 and 25. I'll be there with a buddy going on since about 2003.

This is a good one to go and look around, cost nothing, and the spaces are spread out enough so you arent trying to walk over someone just to move along.
 
Welcome to the Family Tim. When I smoke I have every inlet and outlet open all the way. What you are tasting is Creasote. I still get , and what you want is a wonderful smokey flavor, but not over powering. Good Luck and Again Welcome
