Hi everybody, I just joined, so I wanted to take a minute to introduce myself.  I have been in love with smoked meat since I was a child.  I'm originally from Louisiana and remember by first taste.  My grandfather had a little all aluminum pit that he built.  Believe it or not, he smoked squirrels with actual pecan shells.  I guess both were plentiful and free on his land.  He also used to smoke flounder and redfish.  I have been chasing the tastes I remember as a child like a junkie all my life and have never had anything like it since. 

I was at Sam's the other day and they had a 40" MasterBuilt Smoker that was listed as "Missing screws" for $100 off.  Not wanting to miss out on putting the fate of finding that taste I remember as a kid into my own hands, I figured I can buy a lot of screws for $100, so all I had to do was be able to sweet talk my wife into taking it home - which I successfully did.  I got it home, unboxed it and could not find one thing that it was missing.  It appears it is working 100%!  I completed the "seasoning" of the smoker tonight, so hopefully I will be able to smoke something before the weekend is up.

On a side note, I found this site because I was looking for different meat recipes and saw a lot of referrals to Jeff's Rub and BBQ sauce recipes.  Although I do not know him, there were a lot of people happy using his recipes, so being that the money from those recipes fund this site, I went ahead and bought them to help support a good cause.  If I end up with something that makes my tongue try to beat my tonsils to death if I don't swallow something fast enough, than that's even better!

Howdee Howdee Paul Sounds like it was your day in Sams, did ya get a lotto ticket on the way home? There so many inspirations here and all you have to do is tweak 'em to fit what you like. There are some amazing ideas its almost scary. Pick nearly any food and research it and some one has tryed smoking it.

Oh and whats wrong with pecan shells been using 'em for a long long time.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

Hi Paul and welcome aboard!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  When you can't find the answer you're looking for, just ask and someone here will have the answer.
