Howdy! I've been a barbecue aficionado for a little while now, but finally, with my wife's prodding, bought a smoker and am now trying to figure out what to do with it! While I was perfectly happy traveling around Texas, sampling the finest smoked meats available, my wife would prefer I make it for her!
I am the proud owner of a Oklahoma Joe offset horizontal smoker. I have already read about its deficiencies, and have begun rectifying those shortcomings.
So far, I have ruined one perfectly fine brisket, and one perfectly fine rack of pork ribs. As it happens, my Great Pyrenese has been eating really well lately!
