Howdy,

I'm a new member here from Central Texas. I received a New Braunfels Hondo smoker for Christmas. I am new to smoking meat, but I am very enthusiastic to do as much as I can. I would prefer to use wood, especially mesquite, since I have ready access to as much as I can cut and use. While I will be smoking anything I can, pork will probably be my main meat, because like mesquite, I have all of it that I can catch and dress. Beef and rabbit are two other meats of major interest. Largely because of info I found on this site, I have already ordered a Maverick ET-73 thermometer which will hopefully be here soon so I can begin smoking!

howdy mukewater,welcome aboard & glad you quit lurking.My bro is building a farm of sorts at Doss.He also has all the pork and squite he needs.
 
Welcome to the forum Mukewater, great to have you aboard.
I'm fond of mesquite too.. a word of advice on mesquite, it's a strong wood, doesn't take much to get the smoke you need.

Thanks desert! Doss is just about 100 miles from here. Just a hop, skip and a jump in Texas. Pigs and mesquite are pesky problems here that I am more than glad to do my part to help control.

When you uploading to Photobucket I always use the Large IMG setting, 640 x 480 it is a nice size...
