Howdy from a Newbie

  1. Hello Smokers,

         Thought I gave up that habit years ago, and here I am......oops, that was a different vice.  Actually, I just got an Oklahoma Joe offset smoker for Father's Day and am here to learn the fine points of smoking meats and veggies.  I live in Bedford, Texas which is in the Dallas/Fort Worth Metroplex, so I have plenty of neighbors who seem to be experts on every kind of meat smoking, but not too many of them can smoke meats like some of the experts I have had the opportunity to meet in the past.  I want to learn to do an acceptable brisket, ribs and chicken, and I want to learn about rubs, smoke time, foil time, rest time and all the rest.....

         Looking forward to learning from more experienced smokers.
