Howdy for Tulsa, Oklahoma

  1. Hello to the board.
    I just brought home a new Horizon horizontal offset smoker. So far my trusty ol Hasty-Bake doesn't seem to jealous, but then again I haven't fired the new guy up yet.
    I have quite a bit of experience cooking with the Hasty at temps from about 250-up.
    I have had nothing more than exposure to the offset smoker. I am here to learn.
    First newbie question - should I do anything to season my new toy, or should I just get to smoking?

    Welcome to SMF glad you decided to join us. Congrats on the new smoker. You'll find lots of good info and some great recipes here. I would wash the smoker out then allow it to dry and spray the inside down with either some Pam or take a rag and wipe it down with cooking oil (many will coat the outside of the firebox as well) then light a small fire around 200-250 for about an hour then build the fire bigger till you get about 350 for an hour or so and this should season it nicely

  5. I spray down my smoker with Pam after every cook as well. Good suggestion Piney.

    Yes I would definitely season it first. Just take a wire brush and brush down the inside real good. Then wipe it down with Vegetable oil ( some folks use Pam Spray )


    Light ya a good fire and let her burn. I would say around 8 hours worth of smoke and you should be good to go.


    Some folks even wipe down the fire box with oil to "seal in " the paint.
    Me I took a wire wheel to my fire box and got all the paint off and then wiped it down with oil. I treat my fire box the same way I treat my cast iron.

    I wipe it down every time I burn that way I can cook me up some breakfast on the fire box when I am pulling an all nighter.

    Pam and a fire is how I broke in the Hasty years ago. Some things don't change.

    Today is day 2 of Jeff's Ecourse. Can't wait to get the email.

    I love the board already. Can't wait to smoke a fatty, I had never even heard of those, and all I can say is wow.

  12. Thanks everybody.

    Got my new baby seasoned last night. Had a blast, and all I smoked were a pair of thermometers. Played with the flu and vent, checking temps and making notes and drinking Patron.

    Picked up a couple of briskets this morning, gonna smoke them up for the OU tex game tomorrow – then serve them as “Bevo Beef”
