Have been educating myself on this forum for a couple months. Thanks for the hard work of all on here. Figured it was about time I joined in. I'm a husband, proud father of two sons, and grandfather of three. I'm in North Carolina. Love smoked meat of pretty much any kind so got myself a MES30 and jumped in. Really enjoying it. First thing I tried was baby backs. No foil came out a little dry second round one hour smoked uncovered the covered in a pan with a half inch apple cider 2.5 hours then last hour uncovered came out great. Tried some St Louis style same method they were awesome as well. Also tried a chicken over a can of Dr Pepper everyone loved it. So tender and moist it bout fell apart getting it off the rack lol. I'm hooked for life lol. Looking forward to many years of smoking and trying new ideas.
