Just discovered this forum,and it looks to be a wealth of information. I have very minimal experience with smoking. I bought a small charcoal smoker from Canadian Tire last year,and used it to smoke a couple of pork loins and ribs. I used mequite and hickory chips from Walmart wrapped in tinfoil to produce the smoke. I smoked them most of the day,cold at first,using a pan of water,then removing it later to let it cook.Turned out really good,but now I want to do more,and try different things. A friend brought in some salmon that he first soaked in a mixtuere of maple syrup,salt and brown sugar.He said he smoked it for about 4 hours.It was great. I do a lot of hunting,and do my own butchering,so I'm hoping to try smoking bear,pig,who knows what else. I want to build a smokehouse as soon as it gets warmer,been looking for info on what to build. I live in Alberta,and about the only wood we have is poplar,so that may be a problem. Anyhow,I'm off to browse the forum,see what I can learn.

Welcome to the forum!! If you have trouble finding wood, there are lots of sites that sell it online...I think Jeff's how-to Articles and Links has a few sites under the "Smoking Wood" heading. I know cabela's has several types of smoking wood as well, if you get their catalog or have a store in your area. Good Luck!!
