Been smokin' a couple years, smoking's been in the family for a couple generations more or less.
Building a neat trailer mounted smoker capable of maybe 50 slabs of ribs, 12 or so butts.
I'd say i'm just past novice- but there's a ton more to learn.
Into making 'q sauce, mops, jerky as sidelines.
Did my first whole brisket yesterday...well, and the day before...heh. Good stuff.
