I am looking to smoke ribs the 3-2-1 method.  It seems as though chips in the CIB stop smoking after 40mins or so so I'm curious how I would keep the smoke going with only one box?  Would I add the chips after the 40mins, 20mins before they're done?  i use to do the pouch method and would always add another pouch after 30 mins or so.  That way the next batch of wood could start smoking before the first ran out.  But with one box I'm sort of puzzled.

Thanks.

With my propane smoker thats about the normal time. 30-45 per chip tray. I stopped using the chips, and started using chunks (one good size chunk usually last about and hour or so) and after a while youll get a good feel of when to throw a new chunk on to have your continous tbs. Hope this helps
Alot of people buy the A-Maze-N pellot smoker found in the sponser list here... they work well and the pellots can last for HOURS... Might wanna check out that option for future ease of producing smoke

And sorry. I over read your questiin. About every 30 mins I just add some chips to the top of the tray. Just gotta do it quick so there are no flare ups and burn on your chips up at the same time... thays where the white smoke starts..and that no good

When you're using the chunks, do you just preheat the CIB on the grill then pop a chunk on there, then re-add an hour later?

And when you add more chips to the CIB, are you just adding on top, or do you open the lid, throw out what's in the box and re-add?

The A-Maze-N pellot smoker looks awesome!

If you are interested in an A-Maze-N pellet smoker than look into the AMNTS (the tube), it has shown very good results in propane smokers. The AMNPS (tray type) doesn't work very well in propane, not enough O2 to keep it burning.

Thanks SK9K!  I know this is a little off topic, but has anyone had great success using pellets in the CIB?

If by CIB you mean the chip pan or wood pan than no on the pellets, they will burn up too fast. You will get big thick smoke when they start burning that will only last a few minutes until they are gone.

Thanks for the advice.  The guys at the bbq store said they would be just fine - without even soaking them! Glad I stopped by here and posted a question.  Save me the embarassment from the neighbours!

Thanks for the clarification.. I call both tube and tray the same.... but very different uses via smoker used in....ill think twice next time I recommend products I guess I shouldnt ...

Well i pulled the trigger and bought the tube AMNTS - thanks for the recommendations! I'll be using it in my broil king. I guess it will go on the same side as where the heat is?  i've heard some people having issues keeping it going on a gas bbq.

Just keep it near the air intake (side or rear) and you shouldn't have any problems.
