How to do St. Louis on Bradley Original?

    I just got the bradley smoker and seasoned it and everything is working fine and I'm going to test it out with some St. Louis ribs but noticed they wont fit. Should I cut them in half or try and wrap them around a rib rack?

    Scott , this is a preference . you cut the Ribs after finishing for presentation or just like the look of a whole nrack of Ribs [​IMG]

    Supposing you want a Whole rack ( for presentation to a friend ) , a unique way to do this in a small Smoker is to 'Roll' them , in a circle . This will be about 8"-10" around . You could ideally put in 3 Racks.

    This is with "trimmed St.Louis Style and whole BB's.

    They will cook as any flat lying Ribs would and rolled loose , will get color over the entire surface.

    How do you keep them together? (not come unrolled?)

    They will stay roll as you cook them . Roll loosely ,more like bend and lap the ends some . Almost a circle . . .

    Here are the pictures, dry rub and smoke for 2 1/2 hours then glaze for 1, turned out really good.
