So I started smoking a 9 lb butt today around 11:00am. It's been wrapped in foil since 165F Current temp is 195F. I'm at 225F and I'd like to take it to 205. I gotta tell you, I'm so tired after working outside in the heat all day I can barely function. I suspect the shoulder will hit 205 sometime around midnight. I typically wrap in a towel and stick it in a cooler for an hour prior to pulling. I don't want to end up pulling at 2am. I'd rather do it tomorrow morning.

What are my options? Can I just turn the MES off when it reaches 200 or even 205 and let the wrapped butt sit in the smoker until morning? Or will it overcook? Or is there a risk of it spoiling? Or am I going to have to beat the bullet and pull this thing in the middle of the night?

You can turn the MES down to about 175 after it gets to 205 & it should stay warm without overcooking .
