I just purchased a WSM 18.5 and am excitedly planning on trying some chicken thighs tomorrow. I know that I need to go by IT but what is a rough estimate for how much time? Also what is the best way to light the WSM and how will I know when it's ready for the meat to be put on?
Anywhere from 20 min. to 1:30 or more depending on smoker temp and size of thighs. You can use a charcoal chimney with news paper to get it going. When the smoke clears up your ready for the meat.
you need to cook the thigh until internal temp reaches 165 degrees, the temps you smoke at will vary the time you need to get the thighs done. remember 165 internal temp.
