How long will andouille keep?

    Made a batch of andouille and wasn't able to smoke it right away, froze it for about a week, then thought I'd have the time to smoke it, so I pulled it out of the freezer and into the fridge. That was 2 weeks ago. It still smells fine. It is cured but not yet smoked, think it's still ok?

    Well, smells ok...not slimy?.....I'd do it up pretty quick though.....Willie

    Thanks chef Willie. The fridge is about 38f ssor.
     
  5. That is cold enough for  a while but I wouldn't wait much longer.

    I had a fridge that would hold 33° and milk would keep 3 weeks past the sell by date. In my new fridge at 36° about a week is all I get.
