during my rib trial I discovered something new. I liked my ribs better later that nigh than fresh out of the smoker. of course that is a huge time frame but I had to go to dinner with Santa I just ran across some information where a guy said he waits an hour before serving. maybe this is why everyone likes my ribs more than I do. they are usually eating them 1/2 hr to 3 hrs later depending on arrival times. does this make sense to anyone? do you guys let your ribs "set up" before serving? maybe 30 mins? should i add this to my process?
