how long to wait before serving ribs after pulled from smoker

during my rib trial I discovered something new. I liked my ribs better later that nigh than fresh out of the smoker. of course that is a huge time frame but I had to go to dinner with Santa :)

I just ran across some information where a guy said he waits an hour before serving.

maybe this is why everyone likes my ribs more than I do. they are usually eating them 1/2 hr to 3 hrs later depending on arrival times.

does this make sense to anyone?  do you guys let your ribs "set up" before serving? maybe 30 mins? should i add this to my process?

Seems by the time Pics are taken and everybody gets organized and to the table, 30+ minutes has passed and the Ribs are always good...So you may have something here!...JJ
 
We let them cool down for a half hour to an hour then slice them. Personally I like them the best cold the next day.

The flavor is much more pronounced cold right out of the fridge.
