If my smoker is on, I have the TBS rollin ! I don't foil personally, but if I did that's the only time I'd cut the smoke ! The smoke won't penetrate the foil ! Just my two cents !
I like to smoke for about half the time. But on a 20 hour Butt I did a few weeks back, I only gave it 6 hours of smoke. Everyone said they could taste it and liked the smoke level. But I think it would have been fine even if I had gone to 10 hours. But it didn't need it.
thanks all. li did my seven hours again and started at 11am and at 1 am next morning it was to 185 it. then at 4 am I got up and gas was out........man.... so on Wednesday when I got up I put them in oven at 380 for 2.5 hrs and they were AWSOME.. everybody wanted the sauce recipe and who made the pork. I had about 125 dinner buns and the last two to get seconds got last sdtwo buns....I was internally proud...of course..jeff
