So I forgot to write down last year how long it took for me to cook a fresh ham. So would anybody know how long it would take at 275 to cook a 10 pound fresh ham to an internal temp of 165? I'm trying to figure out if I have enough time in the morning or if I need to get up early.

Tatts4life, estimate 1.5hrs.b. @225*F . you'll not be done in 10 hrs. , it takes time for the Fat and Collegen to break down. Cook to about 170*F for slicing and to 200*F for a great Pulled Ham.

Use a probe therm to tell IMT and don't polish it with anything with a lot of Sugar , it will get really black from sugar Carmelization...

Load up on drinks and get some one to swap stories with , it's gonna be a bumpy ride...

have fun and . . .
