I am leaving for my cottage Wednesday after work and wont get there till late.  Thursday I am smoking a chicken, ribs, meatloaf and a kielbasa.

I am going to try Tony Cachere's injection kit with the rub, and I made my own rub for the ribs.  Question is...would prepping the ribs and chicken tomorrow (Tuesday) with the injection and rubs be to early?  I searched around the forum and couldn't find anything that says you can't do it 48 hours in advance but at the same time I don't want the chicken to become rubbery as I think I read someone said somewhere.  Or should I just wait until Thursday morning to do it all?

Thanks

You can inject ahead of time..... Keep everything refered and smoke at 225 to get the IT (Internal Temps) of the meat up to 140 ish in less than 4 hours for food safety reasons.....   Dave
