How long and what temp

Never smoked anything before and thinking of starting with a fatty. What temp should I shoot for and about how long does a fatty with a pound of beef or sausage take?
 
Look for about 2 1/2 to 3 hours. If I wrap them in bacon I will smoke a little hotter, up to 300*, to crisp the bacon. Just look for an IT (internal temp) of about 165*.
