How I served leftover pork chops

    Earlier this week when I was prepping some pork loins for Canadian bacon, the wife came in and asked me to cut off some chops from one of them.  I cut 6 chops out, smoked and grilled them, and we had chops for supper.  We had 4 left over that we were going to vac pack and freeze, but an unexpected guest last night changed my plans.  Unexpected to ME that is, it seems my bride forgot to mention that Allison was coming to town on THURSDAY for the weekend and not FRIDAY NIGHT like we had discussed...  [​IMG]

    Since the guest was a female friend of my wife, I decided I needed to be in the kitchen and NOT in the same room with them.  When those 2 get together, no man is safe from harassment!  [​IMG]

    Since an unplanned meal was needed, I looked to the chops in the frig.  I decided that I'd simmer the chops in some sort of gravy until they were really tender and then serve them over rice.

    In butter, I sauteed some garlic, onions, and fresh herbs from the garden.



    I then added some homemade beef stock to the veggies and put the chops in to begin simmering down.  I allowed the beef stock to boil off until I stated to get a thick consistency.


    Once the beef stock had simmered off and I began to get a thick "gravy", I added 2 cups of tomatoes that were pureed.  Then the pot was covered and allowed to simmer for almost 2 hours.


    About 1.5 hours into the simmer, I removed each chop and chopped it up some, and added it back to the pot so that I would have a sort of shredded meat in my sauce.



    I then let it simmer until the ladies were ready to eat, and served it over rice.


    It turned out really well!  This will probably be something we do regularly with some left over meats.

    That's a great idea and it looked very tasty. But, where do you get this "left-over" meat that you speak of?

    HA!  You're not the first to ask that question!

    I have a bad habit of cooking for 6 when it's only me and the wife at home.  Now, we only had 2 boys, but they each ate enough for 2!  Still do actually.

    I also travel quite a bit and vac packed frozen goodies keep the wife happy while I'm gone.
