The fatty is probably the easiest and one of the very best items smoked by SMF members.
There seem to be a lot of variations. What do you think?
How do you take your fatty?

Recently I've been adding lots of roasted garlic into my fatty's. It really adds a nice flavor boost!

Great topic, looking forward to seeing the different things people try.

My Favorite to date is the Scottish style fatty... hard boiled eggs, sharp cheddar cheese, scallions and rubbed with Jeff's rub and black pepper. Gawd that was yummy!!
 
Man could I have fun with this if we were'nt trying to be PG.

I like Maple sausage wrapped with Maple bacon. Wrapped in a spiral in fact. I think when you start mixing stuff in and stuffing it, you're making more of a meatloaf.

So, do you add any rub or spices, or just wrap in bacon?
 
I never said I didn't like meat loaf.

In fact if you saw me you'd believe that there's really not much that I don't like.
 
I was looking for the all of the above too!

I liketo make em so I can carry then to work for breakfast. Wrapped in a dough, either biscuit or crecent, with cheese, eggs, onions, peppers or just shreaded apple and cheese. Sometimes I'll stuff it and roll it in crumbled corn muffin. Yummmmmmm
 
I like it straight out of the wrapper, then rubbed with Wild-Willies-Wonderful-Wub seasoning and smoked. Of course it's great right out of the cooker, but it also makes a great cheese quesadilla and even better spaghetti sauce.
 
Funny, I have made about a dozen fatties, but have never used the commercially available sausage chubs yet. I make my own sausage, so I have used my breakfast mix, or a 75/25 pork beef mix in the last batch. Gonna buy a tube of JD and try it tho.
 
My wife said "that stuff's gonna kill you", and I said " at least I'll die happy".
 
This is how I smoke my fattys. They are J.D. Maple, 1 is for breakfast and the rest are for stuffed bananna peppers.

Oh..Ya!! you gota have some BBacks for dinner.
