Hello Everyone,

This site was recommended by a friend who is an experienced smoker.  Boy was he right - it is the best place to go for information!

I'm new to smoking.  Had the El Cheapo Brinkmann years and years ago and did a couple of Pork Butts.  I decided to get into it again  after having some of the best food I've ever had from a buddy's side box smoker.

Bought the cheapy Brinkmann Split-Door Vertical smoker and did some mod's (drilled charcoal pan and modded in a better thermometer).  Did my first Pork Butt last weekend during real gusty wind - oooh it was a learning experience.  Chased temp all over the place for a while - but 17 hours later the butt was 190 and really goood.  Also did some sausage and spam - nom nom.

Thanks for all the GREAT info.  I look forward to the four fattys I'm doing tomorrow!  Going to do battle again with 10-25 mph winds...

Haven't tried Fatties yet, but every thing I see smoked on this site I want to try. :grilling_smilie:
