How Could I Not Join!!!!

Hey SMF, I am Erich from the Kansas City, Missouri area.

I am by no means a pro when it comes to smoking, but I have smoked a few things (mostly ribs and chicken). I have been cooking for years though and know my way around food a lil bit :)

As for my equipment,

Brinkmann charcoal smoker/grill that I have had for years.

Master Forge 2 door that I just acquired over the summer.

Char-Broil Commercial series gas grill that I have had about 3-4 years.

MasterBuilt Grand Slam 30 Quart Turkey Fryer.

Last but not least I have an outdoor patio fireplace and a fire pit ring I like to burn wood down in and place a grate over it for grillin.

So how did I end up here? Well that's a pretty easy one.

Like I said I am no pro to smoking and had never done a turkey before. After getting the Master Forge 2 door over the summer it hit me a couple weeks ago that I should smoke the turkey this year for Thanksgiving. Over the weekend I set out to google smoked turkey and SM had and article that seemed to fit what I was looking for just from the search site. I clicked on it and read through and watched the video where he smoked a bird on his brinkmann in what seemed a cooler windy day.

I decided to click on a few links to the left and read a couple other articles on the site, then I found the forums

The more I looked at the site and the forums the more questions I had, so I looked some more. I then decided to not just take the first place and I went back to do a couple more searches. The few places I went to had one or two articles stating what I already found out from here. So I came back to here and set forth to "lurk" in the forums all weekend. In what little I have smoked in the past the 4 hour rule was not really something I ever had to know or worry about, but good thing I learned all about it in several different posts here on SMF (I even went to read some of the USDA links).

This years bird is about 17-20lbs. so after everything I read about people not going over 12lbs. usually and the 4 hour rule I dug through several more threads about what I could do. Along the way I would pop into a thread with recent activity to see what other people were having concerns with or talking about. I even read through some of the mods people did to their rigs for better perfomance. It was quickly apparent I had hit the jackpot for all things cooking outdoors with a good community feel. So like the title says how could I not join.

All that being said I now have a turkey that I spatchcocked and halved smoking on the Master Forge on two racks.

Welcome!  We are glad to have you with us.  I hope you have also learned that we love pictures here at SMF!  Please take the time to post some. Would love to see how the. Bird turns out. I also have a MF 2 door. It does a pretty good job.
