Decided on ribs.

Cooked at 450 - 550, took under 2 hours.

Happy smoken.

Those look amazing Adam!

Do you always do your ribs hot and fast? What grill are you using?

Very curious as to the differences in taste and texture between hot and fast vs. the traditional 2-2-1 method at 235?

I have been doing all my ribs hot the past few months.

I did them on a rotisserie .   They turn out very juicy and tender.

As far as 2-2-1 method, I have never wrapped ribs.
