Hi, its me again. I rejoined yesterday, and I mentioned that I was looking for the Honey Barbeque Smoked Chicken Wings that my wife spotted in last weeks newsletter. Well, I found it. This was her baby so I didn't provide much input other than mixing them up in Jeff's Rub that I still had on hand, and later with the finished product.
They came out perfect and utterly delicious. She didn't use any smoke, but grilled them indirectly. Picture is included of the wings off the grill. They were great as is, but I like a little crisp on my wings, so I threw a few into the toaster oven and mixed a regular brand honey bbq flavored sauce along with a hotter brand and then a little more honey. OUTSTANDING is all I can say. I regret that I didn't take a picture with the glaze on them; I only made a small batch and polished them off in short order.
Next weekend I'll be trying a recipe for ribs that I found. (I'm a sucker for chicken wings and ribs). It requires using a pink salt which I finally found at the butcher. Had to do my research on that one. I needed Prague Powder #1 which is for a short term cure vs #2 for a long term cure. This recipe will marinate in a brine for 4 to 5 days and then 5 - 6 hours smoke..
