Homemade tasso, after a couple of weeks

Beans are a now and then staple here at our place, but when I make anything close to Mexican, the bride insists that beans are definitely on the menu.

I'm making pollo pibil tonight, so I made a pot of my beans to go with it. Whenever I make beans, meat has to go into the pot. So, I started some pintos and decided that I'd use my recent tasso for the meat....

The tasso then was pretty darn good, but after sleeping in a vac bag for a couple of weeks, oh Dayum!

The color is great, but the flavor is amazing! I told the bride that the other 9 packages will be sitting for a bit before use or freezing! This can only get better!
