Hey folks,

My name is Niko and I live in Nampa, Idaho (about half an hour from Boise). I've been happily married for 10 years and we have 2 boys one is 4 1/2 and one is 3. I have been brewing beer for about six years now, and have been smoking meat for just a few, and not as often as I would like to. I've smoked a couple turkeys, quite a few racks of ribs, and have now developed the obsession of smoking salmon. I've found salmon to be the tastiest salt delivery system that is also healthy (ok, salt isn't healthy..but still..). My wife grew up in a small town called Haines, Alaska and we visited there this last July. I tasted the most amazing fish I could have imagined tasting while there. Before we left I bought some smoked chum and sockeye, in a total of 3 variations of strips (peppered, smoked w/ a locally brewed stout, and regular), then the same in chunks of filets..it was all friggin' amazing. This really have me the bug...

Homebrewer -

I brew beer, not as often as I'd like to but I do! I mainly brew Imperial IPAs and Imperial Stouts. I like a full body beverage with lots of flavor. I also enjoy a fair amount of commercially brewed craft beer. Lagunitas Maximus is my favorite go-to-sixpack. It's a full bodied Imperial IPA that is very very delicious.

Stay at Home Dad -

Almost 5 years ago I founded my company, which is now called Nikobrew LLC. To put it simply, we sell hops to home brewers and pro brewers nationwide. Importing, exporting, working directly with farms, etc. I started my company out of my garage and used to do all the packaging/shipping/etc as well as go to a real job, but since then we have grown to several employees and I manage the business from home and have a warehouse staff and remote office manager who handles a lot of admin stuff. I quit my real job a year ago last February, so now I have more time to do stuff like smoke meat, as long as I don't have to baby it all day since I do actually work and get distracted easily :P

Meat lover - 

I love meat. I love salt, I love pepper. I love really strong flavors. The overcooked or just boring salmon filets at most restaurants just annoys me. I order my steaks rare. I love a good beef tenderloin. I love hot wings. 

..I should probably eat more fruit :P

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

Welcome to the forums, Niko!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Just ask when you need help and someone here will have the answer.
