Bride is at it again......   New Mexico on the left....  Ancho's (driedPoblano) on the right....

1# bag of each I bought the other day....  Bride puts them in the oven at 170 for approx 12-24 hours.....  they get dry enough to put thru the coffee blade grinder to make a nice powder.....   Once dried they can be put in the cold smoker to take on any flavor of smoke you prefer or used plain....   Seems this is best for us due to the short growing season during some years.... you can grind with or without seeds.....  these are fairly mild varieties for a nice flavor addition to just about anything.....

Those look great Dave. They come in bags already dried here so cheap that it is hard to justify doing the work. If you ever need some let me know and it is on it's way
