hog sausage

    Going tomorrow to kill some hogs. Planning on some smoked sausage. Any ideas? I also have some course ground axis deer meat from an axis deer I killed last week. Since I'm going to heat up the smoker was going to thaw it out and stuff some sausage with it also. Thanks for any ideas.

    It is recommended you freeze wild pig meat for 30 days or so at 0 to -5 degrees to kill the "bugs" they may have....
