    Me and a couple buddies throw a party once a year entitled "Hockey Day". We have the cable package that shows all the games and the Canadian coverage of the games. This saturday is the annual celebration with a whopping 12 games on from 1pm-10pm.

    We've got a case of molson and a bottle of Crown Royal.

    I've decided to do a "Canadian BBQ". I'm making Montreal Smoked Meat. I've had it once on a trip to Canada, so i'm gonna do my best to recreate it. It's been hard to find recipes online, but i found 2 and i'm going to take aspects of each and make my own.

    I'm also going to do Canadian Fattys stuffed with Canadian Cheddar and Canadian Bacon. I'm gonna wrap the whole thing in thick sliced bacon...i'm not sure what that has to do with Canada, but it sounds good.

    What is Canadian smoked meat??
    Just remember, thick bacon on your fatty mean's no smoke on your fatty...bacon block's the smoke.

    Wheee! Is the meat made anything like the montreal steak? Red and black pepper and caraway?

    Center Ice is fantastic. I had it back in the "bad old days" of sattilite hehe...

    Better get another bottle of Crown...gonna want to use it in the mop sauce!

    didn't know that, thanks for the advice. maybe i'll leave some spaces inbetween the slices so the smoke can penetrate.

    canadian smoked meat is similar to pastrami. I'm using a flat cut brisket rubbed with the spices listed below. its fantastic on rye with some spicy mustard




    i've used the montreal steak seasoning and i don't think its the same.

    the rub for the MSM is
    2 tsp peppercorns (10 ml)
    1 1/2 tsp coriander seeds (7 ml)
    1 1/2 tsp cumin seeds (7 ml)
    2 tsp fennel seeds (10 ml)
    1 tsp mustard seeds (5 ml)
    1 tsp dry mustard powder (5 ml)
    1 tbsp celery seeds (15 ml)
    2 x allspice berries
    1 tbsp smoked paprika (15 ml)
    2 x cloves garlic, minced
    2 tbsp brown sugar (30 ml)
    1 1/2 tbsp kosher salt (22 ml)


    i toasted all the seeded spices, ground them, then mixed with the other ingredients


    i wouldn't dream of using a bottle of crown royal for anything but drinking. maybe seagrams 7 or canadian club

    Wooo Hooo !!! Hockey Day in Canada (Feb 9th this year). This is fast becoming an unofficial National Holiday here. CBC has the games running all day long (highlighting all 6 Canadian teams of course).

    And I'm positive 1 case of Canadian and 1 bottle of Crown Royal IS NO WHERE NEAR ENOUGH !!!!

    I guess I did not realize the Leafs/Wings start the NHL festivities at 3 PM! Whee...

    Bettman, you really messed up alot of things, but yet another is this: This game today is the first time the Wings have played Toronto in the season since 2004. Despicable than an Original Six matchup like this should be eschewed for the Wings playing freaking Columbus 8 times a season. Grrr [​IMG]

    to explain the pint glass with the shot in it and the maple syrup...we came up with a Canadian Car Bomb. half glass of molson, bombed with a shot of half crown royal, half maple syrup. not my greatest creation but it wasn't half bad. i suggest you try.

    Nice looking smoke. How did the MSM taste?

    it was great. it was eaten before it could cool.

    the syrup was interesting. the sweetness was similar to the baiely's effect in an irish car bomb.
