Im pretty new in the smoking scene. Im glad I found this site. I cant wait to start exchanging techniques and grow together. I recently purchased a Oklahoma Joe Highland Smoker and im planning on season it this weekend.

Welcome to the board! I'm running a similar offset, they can be fussy like running a steam locomotive. Use the Search here to look up that model and get advice on management and modifications.

If the OK is like my Masterbuilt, you'll have a lot of versatility like ignoring the firebox and running it like a giant charcoal grill, etc.
