Hello all!!

I am from the panhandle of Nebraska and have just bought a Brickmann electric smoker to get my feet wet with smoking. So far the flavors are amazing and I really am just guessing on what to do.

I am a Locomotive engineer and love to cook but never really got into smoking but now I am really excited for this as I take my own food to work with me and having all these new flavors is exciting.

A Big Red fan for life to. Go Huskers.

I look forward to seeing what everyone has to say about smoking.

Thanks all to the warm welcome.

After doing some more smoking yesterday I definitely need some advice. Flavors were good on some ribs but still just not the way I would want to serve to company.

Also did a pork roast and wasn't real happy with outcome. Temp was right according to probe but still drier than I hoped and not a lot of smoke flavor.

Go post your questions in the "Pork" forum and give a lot of detail if you can, what you liked, didn't like, what you are wanting, not wanting and also some info about your smoker and the set up. There are a lot of people on here with some really great recipes who I'm sure can get you smoking exactly what you are looking for, I know they sure helped me find what I was looking for!
