Hi all, New member here from Washington state. Just got a new smoker and m all pumped up to get going. I've been a smoker for many years (sounds like a confession of some sort) starting out with my little chief smoker doing salmon and steelhead then moved up to a Smoky Mountain Series. I don't remember much about it but I know it wasn't propane. I sold that when I moved to Texas for a while and down there I bought a huge barrel style smoker with a separate firebox and made lots of great pork butts, beef briskets, and ribs along with lots of good chicken. Hardwoods for smoking are plentiful in the Lone Star state. I had to say goodbye to it when we moved back to Washington and until yesterday I had been using another Smoky Mountain propane smoker that I always struggled to control the heat on. My new one is a Traeger Lil Tex Elite and wow I really like it. Yesterday I made a great whole chicken and today a small picnic ham (Not a butt). Anyways, Always looking for good info and recipes.
