Hi.. Just got a smoker a couple of weeks ago and am really revved up to try some new things.

Last week I did some ribs, this week did a chicken. I do have some fundamental problems in getting this thing to temp. Both times I had to finish it on the grill. All I can say is I am in flavour heaven.

I am starting err off slow though. Any tips or help would be appreciated. I have a grill smith charcoal water smoker, same as the brinkman ecb.

Here is tonight's beer can chicken - smoked with Montreal chicken spices.

Welcome to the forums!  That's a tasty looking chicken!  You've found the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks here who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.

Hi Everyone.. thank you all for the wonderful welcome !!. The chicken was my second smoking attempt (first chicken), and I had a lot of heat problems with my unit. So looks like mods are coming, thanks to some help from a nice lady in Lousiana === THANKS === . I have a Grillsmith charcoal water smoker (sometimes sold as Kingsford), very similar to brinkman ECB only accept that mine came with a grate for the coals, and lid has a proper thermometer, and vent.

Since I am new at smoking I used little wood chips, so I can gauge flavour with out being too over powering. The charcoal I used is Natures Grilling. The briquettes themselves give off a mild smoke,. The bird was sitting in there for a long time around 6 hrs.. and eventually had to finish it in on my grill. I used a Montreal style chicken spice on it and used a 1/2 can of moosehead Canadian lager beer. Despite the long time and heat issues, it turned out pretty  tasty with a light smoky flavour. My little one is not so keen on it, but the queen liked it.

I look forward to learning more as I continue on a new journey in flavour country.
