Hi.. Just got a smoker a couple of weeks ago and am really revved up to try some new things. Last week I did some ribs, this week did a chicken. I do have some fundamental problems in getting this thing to temp. Both times I had to finish it on the grill. All I can say is I am in flavour heaven. I am starting err off slow though. Any tips or help would be appreciated. I have a grill smith charcoal water smoker, same as the brinkman ecb. Here is tonight's beer can chicken - smoked with Montreal chicken spices.
