Good morning, my name is Jere.  I have a MES and I'm new at smoking and curing meats. There is so much I want to try. I've made some canadian bacon. smoked meat loaf, and dried beef so far and they all turned out pretty good. I have been reading different post and learned a lot. I also signed up for the e-course. Hope to learn a lot from the good people that post on this site and eventually be able to contribute a little something myself.

 to SMF. You have come to the right place for smoking info. This site is loaded with great info just use the search bar at top of page to find what you are looking for. If you can't locate the answer just ask folks here are willing to share there knowledge. I think you will enjoy, and pick up a few pointers from the 5 day e-course on smoking. Its chuck full of great info.
