Hello all! I'm Hutch from Bowling Green, KY. I've been receiving the newsletter for quite some time, but just registered on the site. I'm a smoking meat rookie. Last week, I dug out my old Cajun Cooker smoker that I've only used, years ago, maybe three times. Had to perform some body work to get it back to a semblance of roundness, so the parts would fit together.
Prior to yesterday's eight pound butt smoking, I ordered a Taylor Weekend Warrior digital remote thermometer. Unfortunately, this POS didn't survive halfway through the smoking. I set it in the shade and didn't attach it to the smoker, but the display went crazy and finally quit altogether.
Smoking went OK I guess. I think I should have used more hickory. There's not as much flavor as I would have liked, but I'll learn.
I'm considering a propane smoker as I have a lot going on usually and might not be able to be around to tend the coals. Guess that was something else I did wrong yesterday-Didn't add enough charcoal to start with and lost my heat mid-smoke.
