I remember my dad smoking bacon and hams in a smoker  he made from an old wooden barrel  back in the 1950's. Now I'm retiring  from a career as an IT consultant and finding more time to do some smoking of my own. I've modified my WSM to do everything from cold smoking cheese to searing a  steak, as well as the slow smoking it was intended to do. (I'm not sure of your policies around mentioning my own project but I'm sure the moderators will let me know.) Recently I've started a blog at myOldSmokehouse.com. to talk about my experiences with smoking and finding fine smoked foods.
