I just got a Master Forge gas smoker for my 41 birthday and I came across your site while looking for information on smoking. You seem to have great information and I hope to be able to share as I learn also. I just put in a pork shoulder with a rub a friend of mine gave me and can't wait to eat this afternoon. I also saltwater fish a lot and would like to smoke some fish this fall, but that will have to wait. Bring on the PORK!

The shoulder came out great and all enjoyed dinner last night. The ribs came out great also. I can't beleive how tender and tasty meat can be cooking low and slow like that.I can't wait to have another free day to try my next smoke. I realized that having a good supply of beer and cigars helps the process along also.

I live in Branchburg NJ. (Central) And have a house in Tuckerton NJ (South coast) on a lagoon where I fish from. Striper season is coming up, I can't wait to smoke some fish.
