Hi Everyone...my name is Tracy, from New Hampshire but am a born and raised Jersey Girl. I started creating recipes for money (contests) a year ago and 'met' a guy on that forum who smokes. He asked me to join his team when they were here in Warren, New Hampshire and I went for the fun of it (and the beer). Well, long story short...I came home insisting that hubby buy me my very own smoker! It arrived at Christmas and now it is seasoned, almost modified (Thanks to Smokin Out The Neighborhood for his fine and clear mods for the CharGriller.) Hubby has a guy at work making me the charcoal basket:) So, now I am ready to smoke! Will probably do something for hubby on Fathers day...Anyone have any suggestions for starting out small?

I am looking forward to getting to know you all. I have been lurking all winter, but learning A LOT!!!!! You all seem like one big family and I am hoping you have room for one more lil' sis!

Oh, please bear with me when I ask seemingly stupid questions (It's a Jersey thing or maybe I used way too much hair bleach in the 1980's)

Welcome to the forum Tracy! Why not start out BIG with a very forgiving Boston Butt for pulled pork? Very easy, very good!!

Thanks for the welcome Seboke...I amy just do the Butt (the local grocer has them this week for $1.29 a pound). Funny things happen when people find out you own a smoker...suddenly everyone wants to pay you to cook for them. A friend wanted me to smoke pork butt for 50 people. I don't think I'm ready for that yet. My concerns lie with temp control. Any pointers on maintaining temp in a CharGriller Pro would be helpful.

Hi Pineywoods! I read the E-course this winter. Great information! Glad to come out of the shadows...I was waiting for my smoker to be ready, and now, so am I.

Glad to have you on board Tracy! Can't help ya with the smoker. I have a propane unit. You can start a post in the "Supplies and Equipment" forum under the type of smoker you are using and I think you'll find lot's of people with advise.

The pork butt is the way to go Sunday. Can't loose on that and I'd be sure happy to find my wife made one for me. Lot's of great tips in this place and the best BBQ experts in the country to ask question.

Welcome to the site. I'm not arguing with the people who have suggested a pork butt, however, another super easy but totally tasty thing to try is a fatty. Just type that word in the search located at the top and you will see tons of posts about it. I think it's a good way to start?

Smoke Chef...A fatty would be fantastic! My friend YankeeRob (who introduced himself today, and was the one who got me smokin) gave me a wicked recipe for a fatty that is stuffed with hard boiled eggs. MMMGOOD!

While I am also a newbee and haveing only done one smoke, last Sunday on my new Char Grill SNP w/firebox my suggestion would be to leave the grates out of the firebox so if needed you can build a bigger fire. I had trouble keeping the temp. up. Again I am a newbee and the only Mods I have made are a baffle to the firebox and extending the smoke stack down near the grate.
